After dough has been mixed or folded, it can be placed into the Winco ALPD48 proofing pan to rise. With a 77⁄8-inch diameter, the round pan can hold 48 ounces of finished product. It is made of aluminum which, although not as strong as stainless steel, is an economical and damage-resistant choice.
