The stainless steel top holds 18 sixth-size pans beneath an insulated cover, and a 9 1⁄2-inch-deep polyethylene cutting board provides prep space along the front.

The Turbo Air TST-48SD-18-D2-N prep table moves chilled air around the top pans from all directions, forming a cold air shield to keep contents under 41 degrees Fahrenheit. The rear-mounted, self-contained refrigeration system uses R290 hydrocarbon refrigerant and operates within a 33 to 39 degrees Fahrenheit range. Its self-cleaning condenser reduces coil buildup, while LED interior lighting boosts cabinet visibility. The digital monitoring system features an external display, and front-set locking swivel casters support mobility and placement control.
